Delicious & nutritious chickpea recipe

I don’t need to tell you how good these little things are but I will.

Packed with protein , iron and so many vitamins chickpeas make a very nutritious meal and should be part of every healthy diet.

Full of fiber they will help you to lose weight too!

Great energy booster!

This healthy balanced weight loss recipe will provide good health and help you to keep in shape a real feel good food.

Do not use canned as they will only be providing just over 10% of the vitamins you are searching for compared to dried

You will need

  • 400g bag of chickpeas
  • Half cup of olive oil
  • 2 large onions chopped
  • 1 lemon
  • 500g cherry tomatoes or 4-5 large ripe chopped small
  • 1 dessert spoon of honey
  • 1 dessert spoon tomato purée
  • Black pepper
  • Salt

Method

Soak the chickpeas in a large pan/bowl in plenty of cold water overnight.

Drain the chickpeas and rinse with fresh water. Now in a large pan add the chickpeas and cover well with water (allow double water to chickpeas)

Cover and simmer on a low heat for roughly 1 1/2 to 2 hours until chickpeas just pop to taste with a slight nutty bite and soft inside.

Whilst chickpeas are cooking, in a large pan add the olive oil, add the chopped onions and gently fry on a low heat until soft. Chop the tomatoes small and add to the onions and oil leave on a gentle heat until reduced to a sauce (prodding and stirring now and again)

Add a good grinding of black peppercorns honey and tomato purée.

Now once this is done pour all ingredients to the chickpeas (there should still be water at least 1 cm above the chickpeas)

Keep on a gentle simmer and cover.

Add the lemon and try the chickpeas, if they are cooked and soft you can now add the salt, stir and continue to cook for a further 10 minutes.

Leave to stand for 5 mins and serve with some fresh crusty bread to dip!

This tastes great and you will feel great too!
