A soup that will fight free radicals
You will need
- 4 leeks
- 3 medium potatoes
- 1 onion
- 250ml milk
- 1 liter chicken or vegetable stock
- 1 heaped tablespoon of butter
- salt & black pepper
- Fresh chopped parsley to garnish optional
Method
Start by trimming the leeks and taking off the outer layer sliced down along length of the leeks and then thinly slice. Melt the butter on a gentle heat in a large pan then add the leeks and stir, cover the pan with a lid to let them sweat. Whilst that’s happening peel and chop the potatoes to small dice and chop the onion small add these to the pan stir and cover, leave for a further 5 mins.
Now add the chicken stock to the pan then stir in the milk add salt and pepper cover again still on a gentle heat for about 20 mins until everything is soft.
Now drain the soup through a sieve into a large bowl, return vegetables back to pan and blitz with a hand blender. Add back the drained liquid to the pan stir on a low heat and serve with toasted bread to dip.
